TUITION/ TUTORING

The course will be tutored by Sophie Edange and her husband Denis who live on their family Armagnac Estate at Gazaupouy close by. Sophie has run the production now since taking over from her father 10 years ago and has won significant international acclaim with their Armagnac being selected by The Gavroche, Cliveden and Sharrow Bay. She also produces Foie Gras for the Paris Market and will share her extensive knowledge of a wide range of French dishes, tips and techniques.

One of the interesting contrasts between French and English cooking is the simplicity, ease, range of flavours, portion control and pace.

Denis Edange was formerly involved with Edmond Rothschild in Bordeaux as well as his involvement with other Wine & Spirit Associations both in Bordeaux and New York. He is actively involved with Sophie in the vineyard and Armagnac production and will lead the wine tastings and other visits.

We are also planning to invite specialists to come and tutor / demonstrate specific culinary skills. These may cover the gutting/filleting and preparation of fish and the boning and preparation of meat.

In addition there will be demonstrations and tutoring in the easy use of pastry in for example Beef Wellington and fruit tarts, as well as bread making.
